VASILOPITA – GREEK NEW YEAR’S CAKE

Preheat oven at 170C/150C fan/gas mark 3
Beat the eggs with the sugar until fluffy.
Add the sifted flour and mix with a whisk.
Add the melted butter, baking powder, cinnamon, orange zest and finally the dried fruit.
Pour the mixture into a buttered and floured pan with a diameter of 24 cm and bake for 1 hour.
Roast the pine nuts on a pan until golden then leave to cool.
Leave the pie to cool.
To serve: Sprinkle with powdered sugar and garnish with roasted pine nuts.
